Veggie Casserole

3 cups of seeded plum tomatoes (chopped)
3 cups zucchini (chopped)
3 medium onions (chopped)
3 cloves of garlic (minced)
1/4 cup fresh parley (minced)
1/4 cup fresh basil (finely chopped)
1 cup mozzarella cheese (shredded)
2 1/2 cups bread crumbs

Coat 2 7 x 11 baking dishes with nonstick spray. Place tomaotes, zucchini, onions, garlic, paresely and basil in the baking dishes, Mix together cheese and bread crumbs. Toss 1 1/2 cups of this mixture with the veggies. Sprinkle the rest on the top. Refrigerate until ready to bake. Bake at 350 degrees for about 45 minutes.
