With Cinco de Mayo just around the corner I thought I would share with you this yummy and oh so easy casserole.
Mexican Chicken Ranch Casserole
4-5 chicken breast cooked and cut into chunks
1 small green pepper diced
1 large onion chopped
3 Tablespoons of butter
1 can EACH of cream of mushroom soup and cream of chicken soup
1 can rotel tomatoes (diced)
1 clove garlic minced
3/4 pound of longhorn cheese grated
1 dozen corn tortillas torn into pieces
Saute the green pepper and onion in butter until tender. Add soups and rotel and garlic.
In a large baking dish, layer ingredients. With half of each:
chicken, tortilla, sauce, cheese...Repeat the layers ending with cheese. BAKE at 350 degrees for 50 minutes uncovered!
